On Saturday October 9th three lucky level 2 students had the chance to meet Chef Rene Redzepi at a Cookbook Store event in Toronto, and received a copy of his new book Noma: Time and Place in Nordic Cuisine.

ROYAL WINTER AGRICULTURAL FAIR - November 6 -8

WELCOME FIRST YEAR STUDENTS TO THE STRATFORD CHEFS SCHOOL!

As part of the 2009-2010 Orientation Day, we all threw on our rubber boots and headed out to Antony John's farm in Sebringville, Soiled Reputation. We celebrated the beginning of Chefs School with a "Terroir Luncheon" in which everyone pitched in to help. Starting in the fields, the students harvested golden beets, romanesco, fingerling potatoes and jerusalem artichokes. The fire was stoked early in the morning for rotisserie chicken and lamb. We enjoyed the fruits of our labour in the barn, sharing food and drink with 68 fellow students and faculty while being entertained by Antony himself (vocals) and Derek Barnes (vocals and acoustic guitar). A great start to the year! Thanks everyone for attending and helping out! Here are some pictures of the event:

KITCHEN PARTIES

 

Toronto, Ottawa and Vancouver were the sites for the inaugural Stratford Chefs School Kitchen Parties and the events were very well-received by the alumni, prospective students, restaurateurs, food writers and chefs who attended.

Each event was hosted at a restaurant owned by a graduate and food was provided by fellow graduates in the same city.

Toronto - John Pekka Woods hosted 25 alumni and chefs at Alice's Restaurant with food by Mark Cutrara from Cowbell. Wine was sponsored by Henry of Pelham and we got a first taste of the new Sibling Rivalry line.

Ottawa - The Urban Pear, the restaurant of graduate Ben Baird, was the setting for a great reunion of Ottawa alumni. Fabulous charcuterie was provided by Paddy Whelan's Murray Street Restaurant. Huff Estates generously provided the wine for the evening.

Vancouver - The Blue Water Cafe and Raw Bar in the heart of downtown was a perfect setting for our first outing on the West Coast. Blue Water is owned by the Top Table group, which owns several restaurants in cluding Araxi, the restaurant of alumnus James Walt. We were very pleased to serve wines from one of our very own graduates, Heidi Noble from Joie Wines, who was Western Living's Winemaker of the Year.

       

  

ESCOFFIER DINNER 2009 - Integral House, Toronto

A special thank you goes out to everyone involved in making our 2009 Escoffier Dinner a success. Stratford Chefs School Alumni Chefs Jan Campbell-Luxton (de la terre cafe and bakery), Ryan Crawford (Stone Road Grille), Christina Rutherford (Stone Road Grille), Mark Cutrara (Cowbell), Rocco Agostino (Silver Spoon) and Charmaine Baan (freelance - Dish Cooking Studio) collaborated to present an exquisite dinner in celebration of our Escoffier Level Donors and their guests. Dr. James Stewart generously hosted the evening at his widely admired "Integral House" in Toronto.
