Escoffier Circle

The “father” of French classical cooking, George August Escoffier (1846 – 1935) wrote “Good cooking is the foundation of true happiness”, an idea that we embrace at the Stratford Chefs School, that to nourish the body and spirit creates happiness and longevity. 

The Escoffier Circle was formed in 2005 under the leadership of two committed supporters, Jim Pitblado and Richard Rooney.  Between them, they attracted 26 individuals and from that, the Circle became an annual giving program that finances the long-term growth of the School, focusing on developing capital projects. From this fund, we were able to build a modular tiered classroom unit which fits into Rundles main dining room during the School season. The seating is modified amphitheatre in design, with good sightlines and equipped with electric hookups for computers.

Other uses for the fund have allowed a modest renovation to a student project room where working groups convene to step through the numerous and varied group assignments. This site also has internet, two computers and a printer for student use. 

As the future unfolds for the Stratford Chefs School our vision speaks to a dedicated, centralized building, providing world-class facilities for the world-class learning we offer "while still maintaining our connections to the founding restaurants, Rundles and The Prune".  We have also added a Leadership Circle for individuals who wish to make a gift with immediate impact; a Leadership donor recently made a significant gift to support the redevelopment of our website.  Click here to join either giving program.   Join Escoffier Circle
