The Stratford Chef School Welcomes Culinary Heavyweights Oseland
and Yde-Andersen to Stratford and Toronto

 

This month brings a bounty of culinary star power to Southern Ontario, starting with the Stratford Chefs School hosting Danish Henrik Yde-Andersen, the head chef and co-owner of Kiin-Kiin, the only Michelin-star rated Thai restaurant in the world. At the same time, the School hosts Saveur Magazine’s Editor-in-Chief, the incomparable James Oseland, as he prepares to host Stratford Chef School’s latest writer-in-residence program.

Modern Thai is Chef Yde-Andersen’s culinary palate, and his restaurant, described as “charming” by the Guide Michelin, is his playground. The name means “come and eat,” which is exactly what Yde-Andersen, who trained in Thailand for four years, wants guests to do with abandon. He’s taken Thai and elevated it to Michelin’s exacting standards  – and he’s done it with the help of Stratford Chef School graduate Kiki Sontiyart, who works with him at Kiin-Kiin. Yde-Andersen has Denmark’s only Thai farmer growing Thai herbs and spices for him so that the flavours are more balanced, vibrant and reflective of the cuisine that seduced him when he first tasted it in Thailand so many years ago.

On December 4th at 5:30 pm at the Cook Book Store in Toronto, James Oseland will be on hand to speak to cookbook maven Alison Fryer about life behind the “big desk” at Saveur, followed by a brief Q&A with media. Get your questions ready, because he’s not just whip-smart - he’s funny too!
